Every year, May feels like everything is happening everywhere, all at once. Including the tomatoes ripening south of the Great Smoky Mountains (sorry, Northerners; I feel you). But whenever tomatoes reach perfect fruition at your personal latitude, this flavorful summer salad drizzled with mint olive oil is a unique vehicle for sweet, juicy globes. The array is so incredibly colorful it begs to be eaten. And with five days’ worth of antioxidants, you can do so without a gram of guilt.
The Story
My husband, the world traveler he is, occasionally comes back from a locale with a you have to make this food story. And being the chef that I am, I typically do. He enjoyed this tapas-style dish at a restaurant in Madrid years ago and talks about it to this day. The key is to beg, borrow, and steal for the ripest tomatoes and sweetest papaya around. This one is not about technique but showcasing summer’s beautiful bounty.
