The epitome of a four o’clock la pause gourmande.
A Case for Italian Meringue
The signature flavor of French macarons is in their fillings because the shell batter is like a temperamental toddler. One day, it loves the pinch of strawberry powder you added for a natural pink tint. The next, a mere teaspoon of extract elicits a tantrum. But there are careful ways to work flavor into the shells.
