Whipping meringue is a classical baking and pastry technique. Depending on the dessert, the form and type of meringue will differ. Most of my recipes call for French meringue. Why? For no other reason than it is the easiest to master.

Types of Meringue

The three different approaches to meringue that can be used for French macarons are common (French), Italian, and Swiss. I recommend mastering a common meringue first, then experimenting with the other two.
